Nice French Riviera - Best Classic Recipes by Niçois-born, Denis Bensa, will appeal to all those who want to take something home from this special part of southern France, who enjoy delicious, unassuming and healthy cooking and the quality and flavour of fresh, seasonal produce - a selection of favourite recipes from Nice which can be successfully recreated in one's own kitchen.
Denis Bensa comes from one of Nice's oldest families of lawyers who are also passionate about good food and Nice's regional cuisine. He caught the cooking bug while working in restaurants as a student to pay his way through college. Postponing his career in law, he took on a full time job learning to manage a restaurant, everything from cooking to serving at table and running a bar. This « gap year » lasted for seven, before family tradition caught up with him and he now works in the offices of the Law Society. His leisure time is devoted to his two young daughters and also to his other great love, promoting Nice and the Niçois language, culture and traditions, which include the culinary arts. Denis is Vice President of Nissart per Tougiou (Niçois for ever) Cultural Centre which offers members classes in Nissart (the Niçois language), dance and theatre. Recently Denis introduced monthly cookery workshops which he runs in person. Drawing on his family legacy of traditional cooking and a passion for regional produce and good eating, from simple country meals to elaborate dishes, he presents this collection of recipes handed down through the generations.
